Semi-frozen chocolate mousse

Directions

  1. Place chocolate and ½ cup measured cream in a bowl over a saucepan of boiling water - or microwave, to melt. Stir mixture until smooth, then set aside to cool for a few minutes.
  2. In a bowl, beat the 2 eggs, and 1 egg yolk (without the white) and sugar with an electric mixer until thick and pale. Add the melted chocolate and beat well to incorporate.
  3. In another bowl, whip remaining ¾ cup cream and vanilla together until soft peaks hold their shape. Fold this into the chocolate mixture with a light hand, taking care not to lose volume by over-mixing.
  4. Pour mixture into a 1 litre container and freeze overnight to set. Cut into thick slices with a hot knife. Serve with fresh fruit on the side, if desired.
