Classic lemon delicious

Directions

  1. Heat oven to 160 deg C. Grease six 180ml capacity ramekins with butter.
  2. Place softened butter and sugar in a bowl and beat with an electric mixer until pale and creamy. Whisk in lemon zest and juice from one lemon, egg yolks only and milk, then fold in flour.
  3. Whisk egg whites to soft peaks and carefully fold into the mixture. Spoon into prepared dishes and bake for 15 to 20 minutes until puffed and golden.
  4. Remove from oven, dust with icing sugar and serve immediately as these souffle-like puddings will quickly deflate.
