Smoked chicken, minted potato and avocado salad

|2 tbsp||Fresh mint|
|3 tbsp||White wine vinegar|
|3 tbsp||Olive oil|
|1 to taste||Salt & freshly ground pepper|
- Cook potatoes whole in boiling salted water until just tender. Drain and set aside to cool. Peel and cut in large dice and place in a salad bowl.
- Scoop avocado flesh from skins and cut in large dice. Add avocado, onion and smoked chicken to the potatoes in the bowl.
- Combine dressing ingredients, season with salt and pepper to taste and stir until sugar dissolves. Pour dressing over salad, and gently toss to coat.
