Beef and Bean Thread Vermicelli Noodle Stir-fry

This dish is a perfect meal solution when you're short on time and the kids are getting hungry.

|2 tbsp||Vegetable oil|
|1 bunch||Spring onion|
|300 g||Green beans|
|2 tbsp||Black bean sauce|
|2 tbsp||Sweet chilli sauce|
- Cook noodles in boiling water for 2 to 3 minutes or until just transparent, then drain well and set aside.
- Heat a wok or frying pan, add a film of oil and stir-fry beef in two to three batches to brown. Remove to one side. Add a little more oil and stir-fry spring onions (cut into 4cm strips), yellow pepper (sliced with seeds removed) and beans for a couple of minutes.
- Add black bean and sweet chilli sauces and 2 tablespoons of water, then stir-fry for a couple of minutes more. Add noodles and return beef to the pan, tossing well. Stir-fry to heat through. Serve in bowls.
