Directions
Finely slice asparagus on an angle, discarding the woody ends of the spears. Place sliced asparagus in a bowl, combine with oil and season with salt and pepper. Leave to marinate for at least 30 minutes, or preferably overnight.
Toss asparagus and marinade with baby salad greens and arrange on a serving platter. Serve scattered with crumbled feta and pitted olives.
