Barbecue Chicken with Cranbery Sauce

A very simple and quick chicken dish, perfect for alfresco dining.

|1 cup||Red wine|
|275 g||Cranberry sauce|
|1 tsp||Sage leaf|
|1 to taste||Salt & freshly ground pepper|
- To make the sauce, heat 1 tablespoon olive oil in a saucepan. Add garlic and cook for 30 seconds, then add wine and bring to the boil.
- Turn down the heat and simmer for 5 minutes, then add cranberry sauce and sage. Simmer for 5 minutes more to reduce to a thick sauce. Season with salt and pepper to taste.
- Heat a barbecue. Brush chicken breasts with olive oil and season with salt and pepper on both sides. Cook over a medium heat for 8 to 10 minutes on each side until cooked through. Spoon sauce over chicken to serve.
