Oriental noodle salad with coriander dressing

|2 tbsp||Soy sauce, light|
|1 tbsp||Sesame oil|
|1 piece||Fresh ginger, 2cm, grated|
|½ cup||Coriander, chopped|
|425 g||Baby sweetcorn, (1 can), drained|
|227 g||Canned water chestnuts, drained|
|1||Red pepper, finely sliced with seeds removed|
|1 cup||Mung bean sprouts|
|4||Spring onions, finely sliced on an angle|
|1 packet||Crispy noodles, 150g|
- Make dressing by combining soy sauce, sesame oil, ginger and coriander in a small bowl.
- Place salad ingredients together in a bowl. Pour dressing over salad and toss well. Serve immediately.
