Burghul with Feta and Sun-dried Tomatoes

|½ cup||Sundried tomatoes|
|¼ cup||Yellow capsicum|
|3 tbsp||Olive oil|
|1 to taste||Salt & freshly ground pepper|
|150 g||Feta cheese|
|¼ cup||Fresh parsley|
- Place burghul in a bowl and cover with plenty of hot water. Leave to soak for 30 minutes. Drain, rinse with cold water to cool and drain well again.
- Add sun-dried tomatoes, yellow pepper, parsley, garlic, uice of 1 lemon with oil, then season with salt and pepper to taste. Toss and serve scattered with feta.
