Burghul with Feta and Sun-dried Tomatoes

Directions

  1. Place burghul in a bowl and cover with plenty of hot water. Leave to soak for 30 minutes. Drain, rinse with cold water to cool and drain well again.
  2. Add sun-dried tomatoes, yellow pepper, parsley, garlic, uice of 1 lemon with oil, then season with salt and pepper to taste. Toss and serve scattered with feta.
