Roast sweetcorn wheels with sour cream and sweet chilli

Serves 6
Ingredients
6 cups
Sweetcorn
2 tbsp
Olive oil
2 cloves
Garlic
1 to taste
Salt & freshly ground pepper
½ cup
Sour cream
¼ cup
Sweet chilli sauce
3 tbsp
Fresh coriander
Directions
Heat oven to 200 degC. Chop sweetcorn cobs into 2cm-thick rounds and place in an oven pan. Drizzle with olive oil and scatter with crushed garlic, salt and freshly ground pepper. Toss well to evenly coat.
Roast in the oven for 15 minutes or until golden brown, tossing once during cooking.
Remove from the oven and drizzle with sour cream and sweet chilli sauce. Sprinkle with chopped coriander or parsley. Serve hot as a vegetable dish or cold as a salad.
