Roast sweetcorn wheels with sour cream and sweet chilli
|2 tbsp||Olive oil|
|1 to taste||Salt & freshly ground pepper|
|½ cup||Sour cream|
|¼ cup||Sweet chilli sauce|
|3 tbsp||Fresh coriander|
- Heat oven to 200 degC. Chop sweetcorn cobs into 2cm-thick rounds and place in an oven pan. Drizzle with olive oil and scatter with crushed garlic, salt and freshly ground pepper. Toss well to evenly coat.
- Roast in the oven for 15 minutes or until golden brown, tossing once during cooking.
- Remove from the oven and drizzle with sour cream and sweet chilli sauce. Sprinkle with chopped coriander or parsley. Serve hot as a vegetable dish or cold as a salad.
