Tuna, radish and spinach salad

Directions

  1. Combine chopped spinach, sliced radishes and onion in a bowl and toss well. Divide salad mixture between four serving plates.
  2. Combine drained tuna, yoghurt, Dijon mustard, chopped parsley and lemon juice in a bowl, season with salt and pepper and stir to combine.
  3. Spoon a mound of tuna mixture into the centre of each plate of salad. Drizzle salad with olive oil and serve with lemon wedges on the side to squeeze over.

Tip: Substitute canned salmon for the tuna in this recipe if preferred.
