Tuna, radish and spinach salad

| 150 g | Baby spinach |
| 1 bunch | Radish |
| 1 | Red onion |
| 185 g | Tuna in spring water |
| ¼ cup | Low fat yoghurt |
| 1 tsp | Dijon mustard |
| 3 tbsp | Parsley |
| 1 tsp | Lemon juice |
| 1 to taste | Salt & freshly ground pepper |
| 3 tbsp | Extra virgin olive oil |
| 1 to serve | Lemon |
Directions
- Combine chopped spinach, sliced radishes and onion in a bowl and toss well. Divide salad mixture between four serving plates.
- Combine drained tuna, yoghurt, Dijon mustard, chopped parsley and lemon juice in a bowl, season with salt and pepper and stir to combine.
- Spoon a mound of tuna mixture into the centre of each plate of salad. Drizzle salad with olive oil and serve with lemon wedges on the side to squeeze over.
Tip: Substitute canned salmon for the tuna in this recipe if preferred.
