Chilli tofu stir-fry

|350 g||Tofu - firm|
|⅓ cup||Light soy sauce|
|425 g||Baby sweetcorn|
|2 tbsp||Black sesame seeds|
|2 tbsp||Fresh coriander|
- Place the tofu cubes in a bowl with soy sauce, toss well and leave to marinate for 10 minutes. Remove tofu and reserve the marinade.
- Heat a wok or large frying pan, add a little vegetable oil and stir-fry tofu in two batches, tossing regularly over a high heat for about 3 minutes until browned all over. Remove to one side.
- Add vegetables to the pan, in two batches if necessary, and stir-fry with a little oil over a high heat for 3 to 4 minutes, tossing regularly.
- Return all ingredients to the pan along with the reserved tofu marinade and toss well to combine. Scatter with sesame seeds and coriander, then serve immediately.
