Verjuice Vinaigrette for a Simple Green Salad

Verjuice is the unfermented juice of unripe grapes. It has a delicious, slightly tart flavour and can even make a refreshing drink. Being slightly acidic, verjuice can be used in place of vinegar or wine in recipes such as those for salad dressings, marinades, stews, sauces, risotto, meat or fruit, poached fish and baking. You'll find verjuice in delicatessens or speciality food stores and some supermarkets.

Verjuice Vinaigrette

1 tsp Mustard
1 tsp Sugar
1 to taste Salt & freshly ground pepper
3 tbsp Verjuice
⅓ cup Extra virgin olive oil

Simple Green Salad

150 g Mesclun leaves
½ Telegraph cucumber
2 Spring onions
1 optional Avocado

Directions

  1. To make the vinaigrette place mustard and sugar in a bowl and season with salt and pepper. Add verjuice, whisking until the sugar and salt have dissolved and the mixture is smooth.
  2. Add olive oil by pouring in a thin and steady stream while whisking vigorously until amalgamated. Adjust seasoning to taste.

Tip: Stored in the fridge, vinaigrette salad dressing will last for several weeks.

Tip: once opened, verjuice will last for several months if refrigerated.

Tip: Crushed garlic can also be added to vinaigrette, to taste.

  1. To prepare the salad shave cucumber with a vegetable peeler. Combine salad ingredients in a large salad bowl. Drizzle verjuice vinaigrette over salad and toss well before serving.
  2. or, serve verjuice vinaigrette in a jug on the side, so people can add dressing to their own serving of salad, as desired.

Tip: A little sugar brings out the sweetness of dressed salad ingredients.
