Cottage cheese and vegetable loaves

|1 dash||Olive oil|
|500 g||Cottage cheese|
|1 cup||Mixed vegetables|
|1 cup||Rolled oats|
|2 tbsp||Fresh parsley|
|2 tbsp||Tomato paste|
|2 tbsp||Olive oil|
|1 to taste||Salt & freshly ground pepper|
- Heat oven to 190 degC. Brush 12 small loaf or standard muffin tins with oil.
- Place all ingredients (except mushrooms) in a bowl and mix well to combine. (Ensure nuts, onion and parsley is chopped and carrot is grated). Season well with salt and pepper. Pack mixture into prepared tins and decorate tops with a few slices of mushroom.
- Bake for 30 to 40 minutes or until golden brown and set. Take out of the oven to cool and firm, then remove from tins. Serve hot or cold with chutney on the side, if desired.
