French toast with bananas and maple syrup

Serves 4

Ingredients

¼ cup Sugar
½ tsp Cinnamon
2 Eggs
1 tsp Vanilla essence/extract
¼ cup Caster sugar
½ cup Milk
1 French stick
1 dash Vegetable oil
2 Bananas
1 to serve Maple syrup

Directions

  1. To make cinnamon sugar, combine sugar and cinnamon  and set aside.
  2. Lightly beat eggs in a bowl. Add vanilla, sugar and milk and lightly whisk to combine.
  3. Heat a nonstick frying pan and  add a film of oil. Dip a few pieces of bread in the egg mixture and then place in the pan to cook  over a medium heat for 2 to 3 minutes on each side or until golden brown.
  4. Repeat with remaining bread, adding more oil to the pan as needed. Serve toast stacked up with layers of sliced banana. Sprinkle with cinnamon sugar and drizzle with maple syrup. 

    Tip: Take care working with the hot pan when frying the French toast. Keep the temperature of the pan around medium - too hot will burn the bread and too cold can mean a soggy, pale result.
