Pignoli (Italian pine nut cookies)

Directions

  1. Heat oven to 150 degC fan bake. Line a baking tray with nonstick baking paper. Place butter and sugar in a bowl and beat until pale and creamy.
  2. Sift flour, cornflour and salt together, then stir into butter mixture along with lemon zest. Roll small pieces of mixture into even-sized balls and press to flatten slightly. Press pine nuts into balls to coat.
  3. Place cookies on prepared baking tray. Bake for 30 minutes or until golden brown. Remove to a wire rack to cool.
