Pignoli (Italian pine nut cookies)

|150 g||Butter, softened|
|½ cup||Caster sugar|
|1||Lemon, finely grated zest|
|1 cup||Pine nuts|
- Heat oven to 150 degC fan bake. Line a baking tray with nonstick baking paper. Place butter and sugar in a bowl and beat until pale and creamy.
- Sift flour, cornflour and salt together, then stir into butter mixture along with lemon zest. Roll small pieces of mixture into even-sized balls and press to flatten slightly. Press pine nuts into balls to coat.
- Place cookies on prepared baking tray. Bake for 30 minutes or until golden brown. Remove to a wire rack to cool.
