Udon noodles with spicy chicken and peanuts

1 to 2 tbsp peanut oil 2 cloves garlic, chopped 600g chicken mince ¼ cup sweet chilli sauce 2 tbsp soy sauce 4 spring onions, thickly sliced 400g udon noodles ¼ cup chopped fresh coriander

| 600 g | Chicken mince |
| ¼ cup | Sweet chilli sauce |
| 2 tbsp | Soy sauce |
| 4 | Spring onions |
| 400 g | Udon noodles |
| ¼ cup | Coriander |
| 1 cup | Toasted peanuts |
Directions
- Heat a little oil in a nonstick frying pan. Add the chopped garlic and fry for 30 seconds. Add the chicken mince and cook for 10 minutes to brown the mince, breaking up any lumps of mince with a wooden spoon.
- Add the chilli sauce and soy sauce, then stir-fry for a few minutes. Add thinly sliced spring onions and stir-fry for a few minutes more.
- At the same time, cook the udon noodles in boiling water for 3 minutes or according to packet instructions. Drain well and divide between four serving bowls.
- Top the noodles with some chicken mixture. Scatter with chopped fresh coriander and toasted peanuts and serve immediately.
