Place sausages in a saucepan of cold water. Bring to the boil over high heat, then turn down heat and simmer for 5 minutes. Drain sausages and allow to cool a little.
Heat oven to 220 degC. Wrap a slice of bacon around each sausage and arrange in a roasting pan. Scatter the bay leaves, wedges of kumara and red onion around the sausages, drizzle with oil, season with salt and pepper and roast for 15 minutes.
Scatter apple wedges over the sausages and roast for a further 20 minutes, until the sausages are browned and the apple caramelised.

At the end I felt it needed a little more moisture so I splashed a little red grape juice over it and cooked it a bit longer. It came out yummy. I'd definitely make it again but would add a little grapejuice or red wine to the pan.
