Herbed brown rice stuffing loaf

Ingredients

1 cup Short grain brown rice
2 tbsp Olive oil
1 Onion
2 Garlic cloves
½ cup Fresh herbs
1 Egg
1 Salt & freshly ground pepper

Directions

  1. Cook rice in plenty of boiling water for 30 minutes until tender. Drain well and set aside to cool.
  2. At the same time, heat oil in a frying pan, add onion and garlic and cook over a medium heat for 10 minutes to soften. Stir onion mixture into cooled rice. Add herbs and egg, stir to combine. Season with salt and pepper to taste.
  3. Heat oven to 190degC. Form stuffing into a log, wrap securely in buttered foil and bake for 45 minutes. Alternatively, pack stuffing mixture into a greased loaf tin and bake for 45 minutes or until golden brown. The rice mixture can also be used to stuff a chicken. Roast chicken at 190°C for 1 hour 15 minutes or until it is cooked when tested.
