Herbed brown rice stuffing loaf

|1 cup||Short grain brown rice|
|2 tbsp||Olive oil|
|½ cup||Fresh herbs|
|1||Salt & freshly ground pepper|
- Cook rice in plenty of boiling water for 30 minutes until tender. Drain well and set aside to cool.
- At the same time, heat oil in a frying pan, add onion and garlic and cook over a medium heat for 10 minutes to soften. Stir onion mixture into cooled rice. Add herbs and egg, stir to combine. Season with salt and pepper to taste.
- Heat oven to 190degC. Form stuffing into a log, wrap securely in buttered foil and bake for 45 minutes. Alternatively, pack stuffing mixture into a greased loaf tin and bake for 45 minutes or until golden brown. The rice mixture can also be used to stuff a chicken. Roast chicken at 190°C for 1 hour 15 minutes or until it is cooked when tested.
