Baked Eggs with Spinach and Parmesan
A perfect mother's or father's day breakfast-in-bed treat.

|¼ cup||Parmesan cheese|
|1 to taste||Salt & freshly ground pepper|
- Heat oven to 180 degC. Grease two small ramekins generously with butter. Break eggs into a bowl, add cream, spinach and parmesan (grated) and whisk to combine. Season well with salt and pepper.
- Pour mixture into prepared ramekins, dividing evenly. Place ramekins in an oven pan and fill pan with enough hot water to come halfway up the sides of the ramekins.
- Place in the oven to bake for 15 minutes, or until egg is just set. Serve with toast on the side.
