Baked Eggs with Spinach and Parmesan

Directions

  1. Heat oven to 180 degC. Grease two small ramekins generously  with butter. Break eggs into a bowl, add cream, spinach and parmesan (grated) and whisk to combine. Season well with salt and pepper.
  2. Pour mixture into prepared ramekins, dividing evenly. Place ramekins in an oven pan and fill pan with enough hot water to come halfway up the sides of the ramekins.
  3. Place in the oven to bake for 15 minutes, or until egg is just set. Serve with toast on the side.
