Cheese and Carrot Muffins

|3 cups||Self raising flour|
|1 pinch||Cayenne pepper|
|1 cup||Cheese, grated|
|2||Carrots, peeled and grated|
|1||Onion, finely chopped|
|1 tsp||Fresh parsley|
|3 tbsp||Olive oil|
1. Heat oven to 200 degC. Grease a 12-hole standard muffin pan.
2. Place flour, salt, cayenne pepper, cheese, carrot, onion and parsley in a bowl and stir to combine. Make a well in the centre and pour the milk, oil and lightly beaten eggs into the well.
3. Stir just enough to combine. Spoon into prepared muffin pan and bake 25 to 30 minutes or until puffed and golden brown.
