Cajun Blackened Salmon with Cucumber Salad
|2 tbsp||Fresh mint|
|¼ cup||Fresh coriander|
|1 to taste||Salt & freshly ground pepper|
Cajun blackened salmon
|4 pieces||Boneless salmon fillets|
|2 tbsp||Cajun spice|
|1 to drizzle||Olive oil|
- Place the cucumber salsa ingredients in a bowl, season to taste with salt and pepper and mix well to combine. (zest and juice of the lemon, only the juice of the lime)
- Dust salmon portions with Cajun spice to coat all over. Heat a little oil in a nonstick frying pan and cook salmon for 3 minutes on each side until medium rare. Cook a little longer if your preference is for well done.
- Spoon salsa over salmon to serve, with lime halves on the side to squeeze over.
