Cajun Blackened Salmon with Cucumber Salad

Ingredients

½ Telegraph cucumber
4 Spring onions
2 tbsp Fresh mint
¼ cup Fresh coriander
1 Red chilli
1 Lemon
1 Lime
1 to taste Salt & freshly ground pepper

Cajun blackened salmon

4 pieces Boneless salmon fillets
2 tbsp Cajun spice
1 to drizzle Olive oil
2 Limes

Directions

  1. Place the cucumber salsa ingredients in a bowl, season to taste with salt and pepper and mix well to combine. (zest and juice of the lemon, only the juice of the lime)
  2. Dust salmon portions with Cajun spice to coat all over. Heat a little oil in a nonstick frying pan and cook salmon for 3 minutes on each side until medium rare. Cook a little longer if your preference is for well done.
  3. Spoon salsa over salmon to serve, with lime halves on the side to squeeze over.
