Mini Christmas cakes

Directions

  1. Heat oven to 150 degC. Grease a 12-hole mini muffin pan. Place butter and sugar in a bowl and beat until pale and creamy. Beat in egg, vanilla and rum.
  2. Stir in sifted flour and spice, then stir in dried fruits and nuts. Spoon mixture into prepared tins and bake for 25 to 30 minutes.
  3. Remove to a wire rack to cool. Decorate as desired.
