Ingredients

300 g Egg noodles
1 Red pepper, finely sliced with seeds removed
1 Carrot, peeled and finely sliced
1 Celery stalk, finely sliced in strips
½ Telegraph cucumber, finely sliced in strips with seeds removed
½ cup Peanuts, chopped

Lime and chilli dressing

2 tbsp Sweet chilli sauce
2 Limes, juice

Directions

  1. Cook noodles in boiling, salted water for 3 minutes or according to instructions until just tender to the bite. Drain and rinse under cold water to cool.
