Haloumi salad skewers
Olive oil; 200g haloumi cheese, cut in 2cm cubes; 1 punnet cherry tomatoes; 1 small cucumber, cubed with seeds removed; small wooden skewers; salt and freshly ground black pepper; fresh basil

|1 tsp||Olive oil|
|200 g||Haloumi cheese|
|1 packet||Cherry tomatoes|
|1 to taste||Salt & freshly ground pepper|
|1 to taste||Basil leaf|
1. Heat a little oil in a frying pan and pan-fry cubes of haloumi for 3 to 5 minutes, tossing regularly until golden brown all over. Remove haloumi cubes to cool to room temperature.
2. Thread a cherry tomato, cube of cucumber and cube of fried haloumi on to a small skewer. Repeat process with remaining ingredients.
3. Arrange skewers on a serving dish. Season with salt and pepper, then scatter with chopped basil. Serve at room temperature.
