Turkey saltimbocca with marsala sauce

Ingredients

2 Turkey breast
1 to taste Salt & freshly ground pepper
1 bunch Sage leaf
12 pieces Prosciutto
2 tbsp Olive oil
⅓ cup Marsala
25 g Butter

Directions

  1. Heat oven to 180°C. Cut each skinless turkey breast into three equal steaks or fillets. Season all over with salt and pepper. Arrange three sage leaves on each portion, then wrap with two slices of prosciutto to form parcels.
  2. Heat a little oil in a frying pan and add turkey parcels. Cook over a medium heat for two minutes on each side, then remove to an oven pan and scatter with a few extra sage leaves. Transfer to an oven pan and roast for 10 to 15 minutes.
  3. Meanwhile, add marsala to the frying pan you used for the turkey parcels and bring to the boil, scraping any sediment from the bottom. Add butter to melt and simmer for 1 to 2 minutes. Serve sauce over turkey parcels.
