Balsamic Glazed Potatoes
Potatoes get a sweet and glossy makeover in this dish, perfect on the side of any lunch or dinner meal.

|1 kg||Waxy potatoes|
|⅓ cup||Balsamic vinegar|
|2 tbsp||Brown sugar|
|1 to taste||Salt & freshly ground pepper|
|¼ cup||Fresh mixed herbs|
- Cook potatoes in boiling, salted water for 10 minutes, then drain well and return the cooked potatoes to the pan.
- Add balsamic vinegar, sugar and butter and simmer for five minutes with the lid on. Remove lid and cook over a gentle heat for five minutes more, shaking the pan regularly, until a glossy glaze coats the potatoes.
- Season with salt and pepper and serve scattered with herbs.
