Potatoes get a sweet and glossy makeover in this dish, perfect on the side of any lunch or dinner meal.

Directions

  1. Cook potatoes in boiling, salted water for 10 minutes, then drain well and return the cooked potatoes to the pan.
  2. Add balsamic vinegar, sugar and butter and simmer for five minutes with the lid on. Remove lid and cook over a gentle heat for five minutes more, shaking the pan regularly, until a glossy glaze coats the potatoes.
  3. Season with salt and pepper and serve scattered with herbs.
