BBQ Lamb Cutlets with Mediterranean Salsa

Ingredients

16 Lamb cutlets
1 to drizzle Olive oil
1 to taste Salt & freshly ground pepper

Mediterranean Salsa

½ cup Sun-dried tomatoes
½ cup Black olives
¼ cup Capers
¼ cup Flat leaf parsley
2 tbsp Extra virgin olive oil

Directions

  1. Heat a barbecue or grill on high. Brush the lamb cutlets all over with olive oil and season with salt and pepper. Barbecue or grill for  2 to 3 minutes on each side until the lamb is browned and cooked to your liking.
  2. To make Mediterranean salsa, coarsely dice sun-dried tomatoes and olives and combine with the remaining ingredients in a small bowl and toss well.
  3. Remove lamb to a serving platter and scatter with salsa  to serve.
