BBQ Lamb Cutlets with Mediterranean Salsa
|1 to drizzle||Olive oil|
|1 to taste||Salt & freshly ground pepper|
|½ cup||Sun-dried tomatoes|
|½ cup||Black olives|
|¼ cup||Flat leaf parsley|
|2 tbsp||Extra virgin olive oil|
- Heat a barbecue or grill on high. Brush the lamb cutlets all over with olive oil and season with salt and pepper. Barbecue or grill for 2 to 3 minutes on each side until the lamb is browned and cooked to your liking.
- To make Mediterranean salsa, coarsely dice sun-dried tomatoes and olives and combine with the remaining ingredients in a small bowl and toss well.
- Remove lamb to a serving platter and scatter with salsa to serve.
