Homemade hummus

400g can chickpeas 3 cloves garlic, peeled 1 tbsp tahini paste Juice of 1-2 lemons, to taste 1/2 cup extra virgin olive oil Salt and freshly ground black pepper Pinch of paprika, to garnish 1. Rinse chickpeas

| 3 | Garlic cloves |
| 1 tbsp | Tahini paste |
| 1 | Lemon |
| ½ cup | Extra virgin olive oil |
| 1 to taste | Salt & freshly ground pepper |
| 1 garnish | Paprika |
Directions
1. Rinse chickpeas well under cold running water. Drain well and place in the bowl of a food processor with garlic and tahini. Process to chop.
2. Add the juice of one lemon and process to combine. With the motor running, slowly add the olive oil in a thin and steady stream until the mixture is a smooth paste.
3. Season with salt and pepper to taste and add more lemon juice if necessary, to get hummus to desired taste or consistency. Serve in a bowl sprinkled with a little paprika.
