Chocolate Easter cookies
|125 g||Butter, softened|
|⅔ cup||Icing sugar|
|⅓ cup||Cocoa powder|
|150 g||Dark chocolate|
- Heat oven to 160 degC fan bake. Grease two baking trays or line with nonstick baking paper. Place butter and icing sugar in a bowl and beat with an electric mixer until pale and creamy.
- Add flour, cornflour and cocoa and mix to form a dough. on a lightly floured work surface, roll out the dough to 2mm thick. Cut out egg-shaped ovals using a cookie cutter.
- Place ovals on prepared trays. Bake for 15 minutes or until firm. Remove to wire racks to cool. Sandwich cold cookies together with chocolate filling.
- To make chocolate filling, melt chocolate and cream together and stir until smooth. Refrigerate mixture until firm before use.
