Directions

  1. Cook beans (cut into 1cm lengths) in boiling, salted water for 2 minutes and drain well.
  2. Heat a little oil in a wok, add chopped garlic and cook for 30 seconds. Add chicken mince and stir-fry for 5 minutes to brown.
  3. Add chopped chilli, spring onions, juice of 2 limes, fish sauce and stir-fry for 2 to 3 minutes. Add beans and thread coconut, tossing well to combine ingredients.
