Chicken and green bean stir-fry

|300 g||Green beans|
|400 g||Chicken mince|
|2 tbsp||Fish sauce|
|½ cup||Shredded coconut|
|1 dash||Canola oil|
- Cook beans (cut into 1cm lengths) in boiling, salted water for 2 minutes and drain well.
- Heat a little oil in a wok, add chopped garlic and cook for 30 seconds. Add chicken mince and stir-fry for 5 minutes to brown.
- Add chopped chilli, spring onions, juice of 2 limes, fish sauce and stir-fry for 2 to 3 minutes. Add beans and thread coconut, tossing well to combine ingredients.
