Beef Mince Stir-Fry
Stirfries are a great way to get your 5+ a day of vegetables, and this beef one is packed with Asian flavours.

|2 tbsp||Vegetable oil|
|400 g||Beef mince|
|1 tsp||Root ginger|
|500 g||Frozen mixed stir-fry vegetables|
|3 tbsp||Sweet chilli sauce|
|4 tbsp||Light soy sauce|
|½ cup||Roasted peanuts|
|0 garnish||Fresh coriander|
- Heat oil in a wok or large frying pan. Add beef mince and stir-fry over high heat for 5 minutes to brown. Remove to one side.
- Add ginger (grated), garlic (chopped) and onion to the pan, then stir-fry for 2 minutes to lightly brown onion. Add frozen vegetables, sweet chilli and soy sauce, then stir-fry for 5 minutes until hot, adding a little water if necessary to cook the vegetables.
- Return mince to the pan, toss and stir-fry for 2 minutes more. Serve in bowls scattered with peanuts (coarsley chopped) and coriander.
Tip: It is possible to substitute lamb, pork, chicken, turkey mince or sausage meat in most recipes e- each will give a different flavour to the finished dish.
