Classic bolognaise sauce

|2 tbsp||Olive oil|
|600 g||Beef mince|
|400 g||Chopped tomatoes|
|2 tbsp||Tomato paste|
|1 tbsp||Fresh oregano|
|1 to taste||Salt & freshly ground pepper|
- Heat oil in a large saucepan, add diced onion and mince, then cook for 5 minutes, stirring regularly to break up the mince.
- Add the crushed garlic, diced celery, grated carrot, chopped tomatoes (with) juice, tomato paste and water to the pan and bring mixture to the boil.
- Turn down the heat and simmer gently for 30 minutes or until the liquid is reduced and the sauce thickened.
- Stir in the oregano and season with salt and pepper to taste.
