Cajun Potato Wedges

|2 cloves||Crushed garlic|
|2 tbsp||Olive oil|
|2 tsp||Cajun spice|
|1 tbsp||Fresh thyme|
|1 to taste||Salt & freshly ground pepper|
- Heat oven to 200 degC.
- Cut unpeeled potatoes into long, thick wedges and place in a bowl along with the remaining ingredients. Toss well to coat evenly in spices (zest & juice of the lime).
- Spread the potato wedges in an oven pan and bake, turning the mixture once or twice, for 40 minutes or until golden brown.
