Lamb shanks in red wine

|4||Lamb shanks, large|
|1||Red onion, finely diced|
|2 cloves||Garlic, crushed|
|1 sprig||Fresh rosemary, finely chopped|
|1 can||Crushed tomatoes, 400g|
|2 cups||Red wine|
|1||Salt & freshly ground pepper, to season|
|2 tbsp||Fresh parsley, finely chopped|
- Heat oven to 180 degC. Place lamb shanks in an oven pan. Scatter with onion, garlic, rosemary and tomatoes. Pour over the red wine.
- Cover the oven pan and bake for 3 hours, turning the shanks once until the meat is very tender.
- Uncover the pan. Season the sauce with salt and pepper to taste. Serve lamb shanks in bowls with the sauce ladled over. Sprinkle with parsley
