Brunch Burritos with Bacon and Avocado

Ingredients

200 g Bacon - rindless
150 g Button mushrooms
1 Avocado
1 Lime
1 to taste Salt & freshly ground pepper
4 Tortilla wraps

Directions

  1. Pan-fry bacon and finely sliced mushrooms until golden brown. Slice avocado and sprinkle with lime or lemon juice to stop it turning brown. Season with salt and pepper.
  2. Heat a frying pan and add tortillas one at a time, heating for 30 seconds on each side to lightly toast and warm through.
  3. Fill toasted tortillas with bacon, mushrooms and avocado. Serve with lime halves on the side to squeeze over.
