|⅔ cup||Treacle, or golden syrup|
|⅔ cup||Brown sugar|
|2¼ cups||Flour, sifted|
|1 tsp||Baking soda|
|1 tbsp||Ground ginger|
|1 tsp||Mixed spice|
- Heat oven to 160 degC fan bake. Grease a 17 x 27cm slice tin and line the base with baking paper with an overhang on all sides.
- In a large bowl, place softened butter, treacle (or golden syrup), brown sugar and eggs and beat with an electric mixer until pale and creamy.
- Sift in flour, baking soda, spices and salt. Reduce speed to low and mix to incorporate dry ingredients, then add hot water and mix just enough to combine.
- Pour mixture into prepared tin and bake for 30 to 35 minutes or until a skewer inserted in centre of cake comes out clean. Cool in the tin placed on a wire rack.
