Ingredients

400 g Chicken mince
4 Spring onions
1 cup Breadcrumbs
½ cup Unsalted peanuts
¼ cup Fresh parsley
1 Egg
1 to taste Salt & freshly ground pepper
1 to serve Steamed rice
4 tsp Sweet chilli sauce

Directions

  1. Heat oven to 210 degC. Combine chicken mince, chopped spring onions, breadcrumbs, chopped peanuts, parsley and egg white in a bowl and season well with pepper.
  2. Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs to hold together when they're cooked).
  3. With damp hands (to stop mixture sticking) shape into 16 even-sized balls. Place meatballs in an oven pan that's been lined with baking paper.
  4. Bake for 15 minutes or until browned and cooked through. Serve on a bed of rice and spinach. Drizzle each serving with a teaspoonful of sweet chilli sauce.
