Chicken and peanut meatballs

|400 g||Chicken mince|
|½ cup||Unsalted peanuts|
|¼ cup||Fresh parsley|
|1 to taste||Salt & freshly ground pepper|
|1 to serve||Steamed rice|
|4 tsp||Sweet chilli sauce|
- Heat oven to 210 degC. Combine chicken mince, chopped spring onions, breadcrumbs, chopped peanuts, parsley and egg white in a bowl and season well with pepper.
- Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs to hold together when they're cooked).
- With damp hands (to stop mixture sticking) shape into 16 even-sized balls. Place meatballs in an oven pan that's been lined with baking paper.
- Bake for 15 minutes or until browned and cooked through. Serve on a bed of rice and spinach. Drizzle each serving with a teaspoonful of sweet chilli sauce.
