Vegetarian sausage stew

|1 tbsp||Olive oil|
|375 g||Vegetarian sausage|
|400 g||Chopped tomatoes|
|1 to taste||Salt & freshly ground pepper|
|3 tbsp||Flat leaf parsley|
|2 cups||Green split peas|
- Heat oil in a large saucepan. Add onion and cook over a medium heat for five minutes. Add garlic and coriander, then cook for one minute more.
- Thickly slice sausages and add to the pan. Add canned tomatoes, chickpeas and green peas. Simmer for 15 minutes or until sausages are cooked and the sauce thickened.
- Adjust seasoning with salt and pepper, then sprinkle with parsley to serve.
