Skewered lamb koftas

Ingredients

| 500 g | Lamb mince |
| 1 | Red onion |
| 2 cloves | Garlic |
| ¼ cup | Parsley |
| 1 cup | Breadcrumbs |
| 1 tsp | Mixed spice |
| 1 to taste | Salt & freshly ground pepper |
Ingredients
| 4 | Pita breads |
| 1 to serve | Tomato |
| 1 to serve | Rocket leaves |
| 1 cup | Plain unsweetened yoghurt |
Directions
- Combine all of the kofta ingredients in a bowl ( NZ lamb mince, finely chopped small red onion, crushed cloves garlic, finely chopped parsley, fresh breadcrumbs, mixed spice, Salt and freshly ground black pepper and season with salt and pepper). Mix well with your hands.
- With damp hands, to stop mixture sticking, mould mixture into long sausage shapes and thread onto skewers.
- Heat grill on high. Place skewers on grill tray. Grill skewers for five minutes on each side or until cooked and well-browned.
- Serve koftas on warm pita bread with the tomatoes and rocket, plus yoghurt on the side to spoon over.
