Baked Fish with Noodles

Sometimes you need a little inspiration for a mid-week dinner, and this fish dish is put together mostly with pantry ingredients.
Ingredients

| 250 g | Egg noodles |
| 2 cups | Frozen mixed stir-fry vegetables |
| 400 g | Fish fillets |
| 400 g | Coconut milk |
| ¼ cup | Sweet chilli sauce |
| 3 tbsp | Fish sauce |
Directions
- Preheat oven to 200 degC. Spray a 2-litre capacity baking dish with cooking oil. Cook the noodles for three minutes in boiling water or according to the packets instructions. Drain well and place in the baking dish.
- Stir frozen mixed vegetables through the noodles. Arrange the fish fillets on top, tucking the fillets under the noodles.
- Combine coconut milk, chilli sauce, and fish sauce, then pour over the fish and noodles.
- Bake for 20 to 25 minutes, or until fish is cooked and golden brown. Serve immediately.
TIP
Use this checklist to make sure the fish is fresh: Whole fish should have bright eyes (not sunken or opaque), the gills should be red, the skin should glisten, and the flesh should be plump and spring back when poked. Fish fillets should look plump and juicy and should smell of nothing but fresh seawater.
