This is a special occasion salad. Everyone will delight in the contrast between the creamy cheese and the bright acidity and crunch of the seeds.
|2||Buffalo mozzarella, balls torn into 6 pieces|
|2 tbsp||Pomegranate seeds|
|2 tbsp||Flat leaf parsley, chopped|
|2 tbsp||Fresh mint, chopped|
|1||Red chilli, deseeded and finely chopped|
|2 tbsp||Extra virgin olive oil|
|1 to serve||Crusty bread|
- Arrange mozzarella on a serving plate.
- Place pomegranate seeds, parsley, mint, chilli and olive oil into a bowl, then toss.
- Drizzle all over the mozzarella, season with salt and pepper and serve with crusty bread.
