This is a special occasion salad. Everyone will delight in the contrast between the creamy cheese and the bright acidity and crunch of the seeds.

Ingredients

2 Buffalo mozzarella, balls torn into 6 pieces
2 tbsp Pomegranate seeds
2 tbsp Flat leaf parsley, chopped
2 tbsp Fresh mint, chopped
1 Red chilli, deseeded and finely chopped
2 tbsp Extra virgin olive oil
1 to serve Crusty bread

Directions

  1. Arrange mozzarella on a serving plate.
  2. Place pomegranate seeds, parsley, mint, chilli and olive oil into a bowl, then toss.
  3. Drizzle all over the mozzarella, season with salt and pepper and serve with crusty bread.
