Festive kumara salad

|1 kg||Kumara, peeled and cut in chunks|
|2 cloves||Garlic, crushed|
|3 tbsp||Extra virgin olive oil|
|1||Salt & freshly ground pepper|
|½ cup||Black olives|
|½ cup||Red capsicum, Roasted and cut in strips|
|3 tbsp||Fresh mint|
- Cook kumara in boiling, salted water for 10 minutes or until just tender. Drain well and set aside to cool.
- Combine crushed garlic and olive oil, then drizzle over kumara. Season with salt and pepper and toss well to combine.
- Arrange kumara in a serving dish. Scatter with olives, capsicum strips and torn mint.
