Helen Robertson's crock pot Christmas pudding

Sauce

¾ cup Sugar
4 cups Water
50 g Butter

Pudding

50 g Butter
1 cup Brown sugar
1¼ cups Milk
2½ cups Mixed fruit
2½ cups Flour
1 pinch Salt
2 tsp Mixed spice
2 tsp Baking powder
2 tsp Baking soda

Directions

  1. Turn the crock pot on high. Place sauce ingredients in crock pot and stir to combine (use boiled water).
  2. Combine melted butter, sugar and milk in a bowl. Stir in mixed fruit. Sift flour, salt, spice, baking soda and baking powder over the first mixture, then stir to combine.
  3. Carefully spoon the pudding mixture evenly into the sauce mixture in the crock pot. Cover crock pot with lid and cook on high for one hour.
  4. Turn down the heat to low and cook for four hours more or until the pudding mixture is cooked in the centre. Serve with custard, whipped cream or icecream, as desired.
