Christmas ham and pasta salad

Ingredients

| 350 g | Pasta shapes |
| 2 cups | Peas |
| 350 g | Ham |
| 1 | Red capsicum |
| ¼ cup | Fresh parsley |
Dressing
| 1 tsp | Mustard |
| 3 tbsp | Cider vinegar |
| ¼ cup | Extra virgin olive oil |
| 1 to taste | Salt & freshly ground pepper |
Directions
- Cook pasta in boiling, salted water for 10 minutes or until just tender to the bite. Rinse under cold water to cool, then drain well.
- At the same time, cook peas (fresh or frozen) in boiling, salted water for two minutes, then drain well. Rinse under cold water to cool, then drain well.
- Combine all chopped salad ingredients in a large bowl. Place the dressing ingredients in a small bowl, season with salt and pepper and whisk to combine.
- Pour dressing over salad and toss well. Adjust seasoning with salt and pepper if necessary and serve.
Tip: This recipe can simply be doubled or even tripled to feed large numbers of people.
