Retro prawn salad

Who doesn’t love an old fashioned prawn salad? You can buy aioli and mayonnaise at your local supermarket and frozen prawns are much more affordable these days.
Ingredients

| 25 g | Butter |
| 2 cloves | Garlic |
| 32 | Raw prawns |
| 1 tsp | Lemon pepper |
| 1 tsp | Celery salt |
| 2 tsp | Mayonnaise |
| 2 tsp | Aioli |
| ½ cup | Telegraph cucumber |
| 8 | Cos lettuce leaves |
| 1 | Avocado |
| 1 | Spring onion |
| 1 | Lemon |
Directions
- Melt butter over a medium heat, add chopped garlic and saute for 1 minute.
- Add prawns (tails on and defrosted), lemon pepper and celery salt. Cook for 2 to 3 minutes, remove from heat and cool in a bowl on the bench.
- Add good quality mayonnaise, aioli and telegraph cucumber, chopped and with skin on to prawns. Chill for 10 to 15 minutes.
- Serve with cos lettuce and chopped avocado. Garnish with finely chopped spring onion and a lemon wedge.
Cook's tip: Take care not to overdo the prawns – they need very little cooking.
