Parmesan fish bake

|500 g||Fish, white fleshed fillets such as terakihi, snapper or cod|
|1 sprinkle||Salt & freshly ground pepper|
|½ cup||Sour cream|
|1 tbsp||Parmesan cheese, freshly grated|
|¼ tsp||Cayenne pepper|
|3 tbsp||Fresh parsley|
|1||Tomato, medium, sliced|
- Preheat oven to 190degC. Place fish fillets in an ungreased baking dish. Sprinkle with salt and pepper.
- In a bowl, blend together sour cream, parmesan cheese, cayenne and parsley. Spread this mixture over the fish.
- Bake 20 minutes, or until the fish flakes easily, indicating it is cooked. Top with sliced tomato.
The key to cooking fish well is all in the timing. Fish must be cooked quickly and carefully for optimum results, as overcooking destroys its delicacy and moisture.
