Picnic loaf sandwich

Ingredients

| 1 loaf | Sourdough bread, round |
| 200 g | Shaved ham, or pastrami |
| 100 g | Rocket leaves |
| 2 | Red capsicum, roasted |
| 3 | Eggs, hard-boiled and mashed |
| ¼ cup | Egg mayonnaise |
| 1 | Salt & freshly ground pepper, to season |
Directions
- Cut a circle around the edge of the top of the loaf. Remove the circle of crust and pull out the bread from the centre of the loaf to make a cavity.
- Layer the ingredients into the cavity, filling the base with half the shaved meat, half the rocket and all the red capsicum.
- Combine the mashed eggs with the mayonnaise and season with salt and pepper, then spread this over the capsicum. Top with another layer of rocket and finish with a layer of meat.
- Replace the bread lid, pressing it down to compact the filling. Cut the loaf into wedges and cover in plastic wrap for easy transportation
