Picnic loaf sandwich

|1 loaf||Sourdough bread, round|
|200 g||Shaved ham, or pastrami|
|100 g||Rocket leaves|
|2||Red capsicum, roasted|
|3||Eggs, hard-boiled and mashed|
|¼ cup||Egg mayonnaise|
|1||Salt & freshly ground pepper, to season|
- Cut a circle around the edge of the top of the loaf. Remove the circle of crust and pull out the bread from the centre of the loaf to make a cavity.
- Layer the ingredients into the cavity, filling the base with half the shaved meat, half the rocket and all the red capsicum.
- Combine the mashed eggs with the mayonnaise and season with salt and pepper, then spread this over the capsicum. Top with another layer of rocket and finish with a layer of meat.
- Replace the bread lid, pressing it down to compact the filling. Cut the loaf into wedges and cover in plastic wrap for easy transportation
