Picnic loaf sandwich

Directions

  1. Cut a circle around the edge of the top of the loaf. Remove the circle of crust and pull out the bread from the centre of the loaf to make a cavity.
  2. Layer the ingredients into the cavity, filling the base with half the shaved meat, half the rocket and all the red capsicum.
  3. Combine the mashed eggs with the mayonnaise and season with salt and pepper, then spread this over the capsicum. Top with another layer of rocket and finish with a layer of meat.
  4. Replace the bread lid, pressing it down to compact the filling. Cut the loaf into wedges and cover in plastic wrap for easy transportation
