Hot smoked spiced salmon with fresh mango pickle

The salmon in this recipe comes in packets already cooked from supermarkets. This recipe will also work just as well with thick slices of firm fish, eg hapuka.
Salmon fillets

| 4 | Salmon - hot smoked fillets |
| ½ tsp | Curry powder |
| 2 to serve | Limes, or lemon, wedges |
Fresh mango pickle
| 1½ cups | Mangoes, diced |
| ¼ cup | Red capsicum, diced |
| ¼ cup | Spring onion, sliced |
| 2 tbsp | Fresh coriander, chopped |
| ½ tsp | Lime, zest |
| 2 tbsp | Lime juice |
| ½ tsp | Chilli flakes |
| 2 tbsp | Wine vinegar |
Directions
- To prepare the mango pickle 15 minutes before needed, dice all the ingredients and mix together, set aside. (Use1/2 tsp lime zest)
- Preheat oven at 175 degC. Place the 120g hot smoked salmon fillets on grill rack, sprinkle each side with curry powder.
- Remember the salmon is already cooked, so just heat the fish for 5 to 6 minutes until hot.
- Serve with a generous topping of fresh mango pickle and a half lime or lemon.
