Cajun Potato Salad
|1 kg||Red potatoes|
|1 tbsp||Fresh oregano|
|2 tbsp||White wine vinegar|
|4 tbsp||Extra virgin olive oil|
|1 tsp||Cajun spice|
|1 to taste||Salt & freshly ground pepper|
- Cook potatoes in boiling, salted water for 10 minutes or until just tender. Drain and set aside to cool.
- Cut potatoes in half and combine with red onion in a large salad bowl.
- To make dressing, combine vinegar with olive oil and Cajun spice in a bowl. Whisk together, then season with salt and pepper to taste. Pour dressing over salad, then toss well. Scatter with oregano to serve.
