Cajun Potato Salad

Ingredients

1 kg Red potatoes
1 Red onion
1 tbsp Fresh oregano

Dressing

2 tbsp White wine vinegar
4 tbsp Extra virgin olive oil
1 tsp Cajun spice
1 to taste Salt & freshly ground pepper

Directions

  1. Cook potatoes in boiling, salted water for 10 minutes or until just tender. Drain and set aside to cool.
  2. Cut potatoes in half and combine with red onion in a large salad bowl.
  3. To make dressing, combine vinegar with olive oil and Cajun spice in a bowl. Whisk together, then season with salt and pepper to taste. Pour dressing over salad, then toss well. Scatter with oregano to serve.
