Dried apricot sweets
|200 g||Dried apricots, finely chopped|
|50 g||White chocolate|
|½ can||Sweetened condensed milk|
|¼ cup||Icing sugar|
|¾ cup||Desiccated coconut, plus extra for rolling|
|1||Orange, grated rind only|
- Mix all ingredients together,except 1/4 cup of coconut. Cover and refrigerate overnight.
- Next day, form the mixture into small balls, each about the size of a walnut, and roll the balls in dessicated coconut.
- Keep refrigerated until needed. These sweets will last well for up to three weeks if they are stored in an airtight container in the refrigerator.
